I know it's a bit late, but I've got about 40 minutes before the main course is ready, so...

Tonight we will be starting with grilled shrimp on skewers sauced with a reduction of lager beer with a hint of chili. For salad, cucumbers, tomatos, and provolone in an olive oil/red wine vinegar dressing with black pepper. Our main course will be Baby Back Ribs with a spice rub, smoked with whiskey-soaked hickory. Corn on the cob, also prepared in the smoker, will accompany. To follow, fresh strawberries and blueberries with whipped cream, and coffee.

Menu for two, with some leftovers

Preheat grill and smoker

You'll need to have the main course started about 3-3.5 hours before the rest of the meal.

Shrimp Starter
6-8 large shrimp
1 bottle good quality lager beer
4 bamboo skewers
chili powder (to taste)

Heat 8 ounces lager beer to reduce by 2/3. Resultant should have a thin syrup consistency
Peel/clean shrimp, skewer 3-4 shrimp on two parallel skewers (makes flipping easier)
Place shrimp on grill, brush with lager syrup, dust with chili. Cook for about 2 minutes, repeat on other side
Serve with a glass of the same lager.

Salad
1 medium cucumber
2 Roma tomatos
2 ounces Provolone

Rough peel cucumber, cut lengthways and then into 1/4-inch slices
Cut tomato as with cucumber, leaving peel
Cut provolone into 1/4-inch cubes
Drizzle oil and vinegar to taste, mix thoroughly
Place in bowls, apply pepper to taste
Serve with ice water (and finsh your beer aleady)

Main Course
2-3 pounds Baby Back Pork Ribs
8 sprigs fresh rosemary
4 cloves fresh garlic
olive oil
2 ears corn on the cob, husk intact
4 oz whiskey (I use Jack Daniel's)
8 oz water
2 handfulls dry hickory chips
butter, salt, pepper to taste

Mix whiskey and water, add chips, allow to soak for 1/2 hour
Place corn under water, weight with plate if necessary, allow to soak for 1/2 hour
Allow Ribs to come to room temperature in kitchen
Finely chop garlic and leaves from 4 sprigs Rosemary, mix with olive oil in small cup
Apply spice mix to ribs, rubbing all exposed areas
Place Ribs in rib rack and into smoker
Wrap corn in aluminum foil (if you do not want smoke flavor to penetrate corn), place in smoker
Apply chips to heating area of smoker to maintain a continuous supply of smoke. Smoke for 2-3 hours until meat begins to pull up from ends of bones
Carefully remove ribs frm smoker and place on grill to provide gril marks (if desired - not necessary)
Serve with lager beer or iced tea (peach schnapps makes a fine addition to iced tea)

Afters
2 very large strawberries or 6 normal-sized strawberries
2 oz blueberries
2 oz whipped cream
fine sugar

Slice strawberries, combine with blueberries
Top with whipped cream
Sprinkle sugar
Serve with coffee


Bueno apetito!

I don't always eat like this, but sometimes it's nice to do so.

PS: shred the leftover rib meat to make an excellent barbecue sandwich.

SOunds great, but I would have gone with fresh mozzarella in the salad, I dig provolone but only in sandwiches.

In general, perhaps, but there're places in the mountains where the jerked chicken, plantains, and Red Stripe cannot be topped. I loves me some jerked chicken, plantians, and Red Stripe.

It makes me sad that MIA is more than 4 hrs from your house and then Islamorada is another 5 hrs from there.

Buck up, my sad panda. All is not lost. As similar to all the other restaurants as it may be, Bentleys Raw Bar (Mile Marker 82.8 in Oceanside) has decent peel & eat shrimp and frosty cold beer. Have a good time in Islamorada. It is beautiful there.

Heres a good one:

Shitkickers

You will need:

25 Jalepenos
Tub of Whipped cream cheese
One package of Bacon
A pastry decorator bag with O-tip (I dont know exactly what its called but chefs use them to decorate cakes n shit)

1)Take jalepenos and cut off top and stem.
2)Take Whipped Cream Cheese and put it in the pastry decorator bag. Make sure that it is WHIPPED cream cheese or else it wont work. Warming up the cream cheese to make it softer is a good idea.
3)using O-tip on the pastry bag, insert tip into open end of jalepeno and gently squeeze so Whipped cream cheese fills jalepeno. Be CAREFUL!
4)After all Jalepenos have been filled, preheat a skillet. Take bacon and quicly cook on skillet. DO NOT MAKE THE BACON CRISPY. IT MUST BE FLOPPY!
5)Take Bacon and wrap around stuffed jalepeno using toothpicks to keep it on.
6)Put bacon wrapped jalapenos on the grill until bacon is nicley cooked.

four slices roast beef
three slices hard salami

construct as follows:

rye
american
roast beef
swiss
salami
swiss
rye


microwave 45 seconds.

feeds 1. serve with cold glass 1% Milk.

satisfaction rating: highly satisfactory. Will repeat in future.
