Recipe Post - The Best Chili I've Ever Had - or - Does Anyone Want to Come Over for Dinner? (501 hits)

Today I was watching Food Network, and one of Paula Deen's shows were on. Now, I don't normally like Paula, as her favourite spice is BUTTER, but she was making chili, and my food hormones got going. So I found a basic recipe, altered it a bit, and found out that this is REALLY the best chili I've ever had the pleasure of dining on.
First off, let me tell you, if you make it, you're going to need a big storage bowl, I ended up getting a 5 quart one, and it worked well. I actually cut the original recipe in half. You'll also need a five quart pot, and a skillet.
Ingredients:
1 pound 93/7 ground beef (I actually skipped this as I promised my best friend I'd TRY to become a vegematarian, and it was quite superb)
1 medium yellow onion (diced)
4 cloves minced garlic
3 TBSP Worcestershire sauce
1 TBSP extra virgin olive oil
1/2 package chili seasoning
1 1/2 TBSP ground cumin
1 1/2 TBSP chili powder
1/2 TBSP ground oregano
2 TBSP fresh basil
1/2 TSP cayenne pepper
3 bell peppers (green, red and yellow)
1 zucchini (diced)
1 yellow squash (diced)
2 cans stewed tomatoes
1 can diced tomatoes (I used Italian Style)
1 can corn (drained)
1 8oz package fresh sliced mushrooms
1 can black beans (drained)
1 can kidney beans (drained)
1 can white Cannelloni beans (drained)
3/4 cup water
Directions
In Skillet, brown beef with onions, garlic, Worcestershire and olive oil for 10 minutes.
Add chili mix, chili powder, oregano, basil, cayenne pepper, and cumin.
Add peppers and saute 5 minutes.
In the 5 quart pot, saute zucchini, squash, and mushrooms until tender.
Add beef mixture, and add cans of tomatoes. Cook for 10 minutes.
Add beans, corn and water.
Salt to taste (I found that this is pretty salty as is, and I opted to get low sodium beans and corn).
Let cook for another 20 minutes on medium heat to integrate spices.
I topped this with a little shredded cheddar cheese and sour cream. I found this isn't as spicy as I would like, so you may want to attack the Tabasco/Red Hot.
But hey, winter's coming, and this is a cheap meal, considering it makes so much (as is really good to freeze). I think overall it cost me about $15 to buy everything for, including the bowl I had to go out to get after realizing the massive amount of food this made.

Congrats on going veg. I'm trying, but I'm at the point where I could maul a chicken at this point.
I made this chili without the meat, and it was really good. I love veggies, so I'm a happy camper.

I happen to love drunk, lecherous old ladies in general and Paula Deen in particular. The crab stew at the Lady and Sons is worth standing around for two hours waiting to get in.
Sadly, though, I have decided to go veg. So I will not be partaking of Paula's crab stew again, nor will I be eating this chili.

I grilled chicken and served it with pineapple/peppadew cooked salsa, green beans, and fried plantains. Kiwis and strawberries for afters. Muy buena. I shall be making chili tonight, and for that I blame you. Mine will be con carne, however.

I live too far away from anyone who uses the word 'skilet' to ever really visit for any sort of meal. Heck, I don't rightly know all that many folks who even really do 'meals'. We all like homeless, only we rent accomodation.
