I got my DVR about three years ago. It stores about 60 hours of TV.
My theory was that I would record things I was interested in and watch them the next day so I could fast forward commercials and I would save time.
I hadn't counted on the countless History, Discovery and Nat'l geographic specials that I would never stay home for or plan to watch, but could keep for whenever I had time.
I filled up the 60 hours in two weeks.
I trimmed a lot of it out, but I always have crap on there I want to watch.
I have random HD wide screen movies just because I think some scenes will look bad ass on my TV.
I have a few always sunny in Philadelphia episodes because by brother doesn't get it and I want him to see them when he visits.
I have four of the six hour documentry on the history of jews in America (I can't believe those bastards at PBS ask for money when they can make High def documentries).
I have American Gladiator and Bad Girls club, because if I have 10 minutes to kill watching trashy whores start "drama" or seeing people go up against roid heads on the "wall" or "rings" can sometimes hit the spot.
I was suprised yesterday by Reno 911, one of the few funny shows on TV, had no idea it was back on the air.
Every once and a while I will get a cool looking movie or one I had really wanted to see that turns out to be 2.5 hours of black because after stumbling home and checking out the tube I am too loaded to understand channels I have and don't have.

Dexter is one of the best shows I have ever seen.
The first 48 is also very kick ass.

No DVR or TiVo. Just my handy Archos 605 Wifi(just replaced the former Cowon A2) and the power of torrents. I only watch shows during my 90-minute commute to and from work each way every day. The only TV I really watch at home is sports. With that specification, I currently have Lost and Futurama on my device. And an Allie Sin video.
Previous shows I've watched from first-to-last in the past few months are:
-The Wire (badass show)
-Dexter (so good, just...so good)
-Nip/Tuck (jumped the shark after the end of season 4)
-Heroes (fuck you, I love it)
-Pushing Daisies (not really a good show, but I forced myself through it)
-Chuck (same as above, but with a hot female spy)
-Weeds (really cool show, have a feeling it's about to jump the shark)
-Flight of the Conchords (first 11 episodes were amazingly funny, season finale was waste of time; tragically, based on said finale I don't see this going past a second season)
That's hundreds of episodes of stuff that I've seen. All of it on Metro North or NYC subway. Holy fucking balls.

I haven't watched much tv over the years, but now that it's just me and the baby, I find myself watching it more and more. Cartoons when Soren's awake and stupid shows like "Rock of Love" when he's asleep.
I love that show for some reason.

Yes, it does everything a commercial DVR does - and better. I can copy the unencrypted mpegs off to my PC, edit the commercials out, and burn them to DVD for friends.
I purchased a piece of software to manage it all because it had the features I wanted and easy setup. When it comes time to upgrade, I will be getting a card with hdmi-in and IR blaster to directly manage the cable box as the output, instead of not always successfully decrypting the stream off the wall.

I couldn't find anything that could record the signal and keep it in high def (although I am sure there are people more savvy than me that can)
The other problem is setting up recording times. With a DVR I can set it up to only record new shows, with building your own you are constrained to setting reocurring recordings at specific times, which is more of a pain.
On the one you built is it constantly recording what you watch so you can pause rewind etc?
Can you record more thanone show at once?
Maybe yours can do all of that, but the few people I know who built their own can't.

I pay $60 a month for Verizon FIOS and just pirate any tv I want to watch. Can't see actually paying someone for tv shows nowadays.

I think I've used my DVR about ten times since we got it last fall. Just not home enough to sit down and watch that much television.
That being said, I've got a backlog of Sunday night Simpsons episodes waiting for me, plus a few favorite movies I'll get around to eventually - "The Fugitive", "Fast Times at Ridgemont High", "March of the Penguins", "Silence of the Lambs", and "Psycho".
