"cowboy" is another word for bounty hunter in that era
"bebop" is the name of their ship
hence the title "cowboy bebop" or "the bounty hunter ship"
its a well done series though almost all the background music is jazz
one of the higher acclaimed animes

I pulled a lot of this from IMDB.com's user reviews and stuff, so someone correct me if it's wrong.

It's set to, and a lot of the episode titles are references to, a lot of old-school jazz and blues, hence the "bebop" part of the title. It doesn't look like classic anime, none of the goofy-lookin facial expressions. From the screenshots it looks more like a hyper-realistic GI-joe.

The netflix community gave it surprisingly good reviews for something animated. I saw a lot of people there compare it to Heavy Metal. (Remember? Anyone? 1981? realistically drawn cartoon? Mostly hippies, and some rock music? I'm not THAT old for christ sakes...)

It's not just a lot of jazz references, the story is told like jazz. Slow, meandering out of the gate, free flow, non linear, yet somehow cohesive. The philosophy of the writer (Shinichiro Watanabe) is that music is a universal language and he tells the story not just using the music as a back drop, but animating in the spirit of it. He followed Bebop up with Samurai Champloo, which fuses Samurai culture in the Edo era with Hip Hop - and with great success. The sword fights are amazing.
Anime is just another medium for storytelling. And there are a lot of good stories being told.

The appeal of anime, at least to me, is the plot itself but especially plot structure. Take for example, Cowboy Bebop: The structure and sequence of the story is a bit unconventional but its also the themes/motifs that are weaved pretty well into the plot. Most people complain that the "main" story and relationships between the characters are left too vague but I think this series is a perfect example of "showing" instead of "telling."
I guess what I'm saying is people into form and expression in literature might have a better appreciation of what some anime try to do.

I always seem to forget the trial and error part of learning to ride a bike with no hands, throwing the "perfect" spiral with a football or the tickling fear that came with being "just that high" in a tree I had climbed...Life inside, on the corn-chip-smelling couch, isn't all that bad and it seems to really work for you. I bought most of these before bittorrent existed, and a long time before I had an unlimited 24mbit connection, but even these days I usually end up buying box sets and DVDs even after "previewing" the episodes via bittorrent, because whether you like it or not, if you don't pay for what has been produced, less shows in the future will have a chance to be produced.

Do you remember that young girl who did all those things with her body? Yeah I guess you could say it was me who gave her her start. I hear she's working for resident Clinton the way she used to work for me but my pink flamingos keep pecking at her heart. And baby, I sometimes find it odd you've got to climb the statue of the demon to get closer to god. Now there's a crowd outside demanding my resignation and a policeman about to draw his gun. Seems I've lost this battle but the war has just begun, because my pink flamingos will outlive everyone. I just can't sit still anymore. I want to break things with my hammer, I want to start a little war. And isn't that what this little red button here is for? Evil policemen patrol the city, they look for somebody to kill. They done a little damage, they want to do some more now. And they probably will.
